Make Delicious Garlic-Tomato Soup at Home

Garlic-tomato soup is as delicious as it is healthy.
Whether it's a winter morning or a light dinner on a busy day, a bowl of hot soup brings instant comfort. Garlic-tomato soup, especially made with a combination of tomatoes and garlic, is as delicious as it is healthy. This recipe, made with simple ingredients, has been shared with the readers of Channel 24 Online by chef Rubaida Rakhi.
Ingredients
Ripe tomatoes – 4–5 (coarsely chopped)
Garlic – 6–7 cloves (minced)
Onion – 1 small (minced)
Olive oil / butter – 2 tablespoons
Water / vegetable stock – 2 cups
Pepper powder – ½ teaspoon
Salt – to taste
Sugar – 1 pinch (optional)
Dried oregano / basil – ½ teaspoon (optional)
Fresh coriander – for garnish

Method
First, heat olive oil or butter in a kadai or pan and add garlic to it. When it turns light brown, add the chopped onion. Now when the onion becomes soft, add the tomatoes, stir well, cover and cook for 5-7 minutes. When the tomatoes become soft, add water or vegetable stock, salt and (if desired) sugar. Let it boil on medium heat for 10 minutes at this stage.
Now remove from the stove and blend it smooth with a blender or hand blender. Put it back on the stove and add pepper and oregano/basil and cook for another 2 minutes. Before removing, scatter coriander leaves on top.
Tips
If you want to get a smoother texture, you can strain the soup.
If you are on a diet or diabetic, omit the sugar.
If you want a little creamier taste, 1 tablespoon of fresh cream can be added.
Serving
Serve hot garlic-tomato soup with garlic bread or toast. It is suitable as a light meal, as well as great for entertaining guests.
